Pancakes like mom's
The recipe has been passed down from my great-grandmother Marusa, and I could never understand what I was doing wrong, why my mom's always turned out right, but mine didn't. My mom does it by eye and waves her hand, and everything works out for her. And now, for the first time in my life, the dough has risen for me too.
I have to say, I'm not excited about flat pancakes, because I grew up on the fluffiest ones!
Perfect. We take sour cream, jam, condensed milk, and enjoy.
Step by step
Heat the kefir to 35 degrees, it's very important that it's warm, I even leave it outside the refrigerator overnight.
Mix the kefir, egg, sugar, and salt with a whisk. Add the flour and mix with a silicone spatula (this is also very important). Don't overmix, the dough should be quite thick, ideal uniformity is not needed here.
Add the baking soda, mix slightly with the spatula, and let the dough rest for 20-30 minutes in a warm place. DON'T MIX ANYMORE!
Heat a non-stick skillet (mine is set to 7), lightly spray with oil, and start scooping out pancakes with a tablespoon. Cook covered, flip, and you can reduce the heat a bit to finish cooking.
